Juicy Prosecco Mimosa

Put some punch into brunch with this delicious Mimosa.

INGREDIENTS

  • 1 bottle of [yellow tail] Prosecco
  • 4 cups watermelon, cubed
  • 1 lime, juiced
  • 2 tbsp sugar
  • Mint and watermelon wedges (for garnish)
  • Blend together cubed watermelon, lime juice and sugar in a blender.
  • Strain mixture through a fine mesh strainer, discarding solids.

PREPARATION

  1. Fill champagne flutes halfway with watermelon mixture and top off with [yellow tail] Prosecco.

  2. Garnish glasses with a few mint sprigs and a watermelon wedge.
