Tea Time Spritzer

It’s like high tea, but with wine.

INGREDIENTS

  • 1 bottle of [yellow tail] Bubbles, chilled
  • 1 cup sugar
  • 1 cup boiling water
  • 2 Earl Grey tea bags
  • Fresh lemon wedges (for garnish)
  • Mint leaves (for garnish)

PREPARATION

  1. Dissolve the sugar in 1 cup of water and bring to the boil in a saucepan. Reduce the heat to low until the mixture becomes a syrup and remove from heat.

  2. Place the tea bags in the mixture and let it come to room temperature.

  3. Refrigerate until cold.

  4. To serve, add 3 tablespoons of the tea syrup to a glass before adding a serving of [yellow tail] Bubbles and garnishes.
